Los Angeles was founded in 1781 under a 55-letter Spanish name honoring the Virgin Mary and the nearby river. It's been shortened progressively for two centuries. Today "LA" is the shortest official version of the longest founding name of any major American city.

The Los Angeles River is still there. It's mostly concrete now — but the city literally couldn't exist without it, and locals are slowly bringing it back to life.

The story goes that the shape commemorated the 1683 Ottoman siege of Vienna, when city bakers working through the night detected the Turks tunneling under the walls and raised the alarm. To celebrate the victory, they baked pastries in the shape of the crescent on the Ottoman flag. Historians dispute the details, but the pastry itself is definitively Austrian and older than the siege.

The croissant arrived in France in 1838, when an Austrian entrepreneur named August Zang opened the Boulangerie Viennoise on Rue de Richelieu in Paris. The French adapted the recipe with laminated butter dough — and made it famous worldwide.

The category of French bakery pastries is still called viennoiserie. "Things from Vienna." Even the French acknowledge it.
